You can add a character delimiter to build such a structure. For example: Shoes / Winter Shoes / 2025 Collection. In all lists and reports, you can choose which categories (or subcategories) will be listed.
Note however that Megaventory is not developed to be used as a product catalogue (shopping cart etc). As such, having a real category/subcategory structure for navigational purposes is not really needed.
