It is possible to update SKU codes. It can be done from inside the Product screen:

Just click on Unlock SKU and change it in the text box. Then, hit Update at the bottom.

Please note that this will update the SKU in all issued orders/documents in the past as well.

Also, the new SKU should not match an existing one already in the system.
